Bistro Bastardo, on first sight one might think profanity. However despite what the name suggests, the bistro is home to a variety of food that our city of Brno hold so dear to our hearts. Being a staple of Mexican cuisine for the last few years, the bistro has dominated the market being one of the top 5 places to eat at for the last 4 years running voted by Gourmet Brno.
Tomáš Kundera & David Reschowský ventured to bring the much needed Mexican cuisine to the city of Brno. At the start, having no official chef, they were in search for a fitting candidate. Who they came across was none other than chef Alejandro Roa Perez from Mexico, a match that would prove to be the best. Chef Ale, being the first to bring the flavours of Mexico to the city strived with both Tomas and David running with only one day off per week to bring us the food what we all so very much enjoy.
Upon a year of opening the establishment bloomed so much that they even considered branching out. This led to the opening of the Štefánikova branch which also included a varied menu. Now on this podcast manager Jirka Czakan and new head chef Jose Rodriguez talk about their struggles, and joys of playing bigger roles in the team.
Tune in to this episode for a ride of banter, joy and inspiration from the local Gs that dominate their area of expertise in Brno. Also to gain some valuable information on how to open and run a bistro.

A G, or more commonly known as "Gangster" represents in our definition an individual who's livelihood involves the well-being, of not just themselves but all those around them.
